Popcorn 3 ways

When it comes to those afternoon sweet cravings, this high-fibre snack certainly hits the spot. Whether you’re looking to work in more antioxidants, calcium or polyphenols into your diet, this recipe has you covered.

Ingredients

Turmeric & black pepper

  • 1 tbsp extra virgin olive oil
  • 50g popcorn kernels
  • 1 tsp turmeric powder
  • ½ tsp black pepper
  • Pinch of salt

Strawberry popcorn

  • 1 tbsp extra virgin olive oil
  • 50g popcorn kernels
  • 38g freeze-dried strawberries

Chocolate & coconut popcorn

  • 1 tbsp extra virgin olive oil
  • 50g popcorn kernels
  • 150g 70% dark chocolate, melted
  • 20g desiccated coconut

Method

  1. Heat the oil in a large saucepan, add the popcorn kernels and cover with the saucepan lid.
  2. As soon as it begins to pop, continuously shake the pan to ensure the popcorn doesn’t burn.
  3. After 1 min or so, once the popcorn has slowed down significantly, remove from the heat.
  4. For the turmeric coating, mix the turmeric, black pepper and sea salt in a small bowl and stir.
  5. Sprinkle over the popcorn and shake the bowl/ stir through until fully coated
  6. For the freeze-dried strawberries coating, blend the freeze dried strawberries into a blender for 20 seconds, until it forms a fine powder.
  7. Sprinkle over the popcorn and shake the bowl/ stir through until fully coated.
  8. For the bounty coating, add the desiccated coconut to a pan over a medium-low heat for a few mins until toasted.
  9. Spread the popcorn over a sheet of greaseproof paper, then drizzle over the dark chocolate and sprinkle the coconut. Leave until the chocolate has firmed up.
  10. Break up the popcorn and transfer into a bowl.
