Gut:skin chocolate edamame bites

Crunchy, chocolatey, and full of plant-powered goodness – these chocolate-covered edamame bites are the ultimate protein-packed snack to keep you feeling satisfied. P.S If you want to follow along with Megan, check out her recipe video on Instagram here.

1 .50 Plant Points

Ingredients

  • 150g dark chocolate (70%+)
  • 1 tsp extra virgin olive oil
  • 100g dry-roasted edamame beans
  • Pinch of sea salt (optional)

Method

  1. Line a tray with baking parchment and set aside.
  2. Melt the dark chocolate in a large bowl over a saucepan, or in the microwave. Remove from the heat and stir in the extra virgin olive oil until smooth.
  3. Then add the edamame beans and stir until combined before pouring the wet mixture onto your lined baking tray and placing it in the fridge for 30 mins (or until the chocolate hardens).
  4. Once set, slice the bark into pieces and store in a sealed container in the fridge for up to a week. Enjoy!
