Gut: heart nourishing baked apple & crumble

These baked apple crumbles are warm, crunchy, and gut-nourishing. Packed with fibre, antioxidants, and healthy fats, they’re a cosy snack that will satisfy your taste buds and microbes!

Ingredients

  • 4 red skinned apples (we used pink lady apples)
  • 120g fresh or frozen blackberries
  • 100g granola (we used Bio&Me Apple & Cinnamon Granola)
  • 60g mixed nut butter or nut/seed butter of choice
  • 30g chopped pecan nuts or nuts of choice
  • 1 tsp ground cinnamon
  • 2 tbsp olive oil
  • Pinch of sea salt
  • Yoghurt to serve (we used Bio&Me Vanilla Kefir Yoghurt)

Method

  1. Preheat the oven to 160°C fan.
  2. Cut the apples in half and spoon out the cores.
  3. Place the apples on a lined baking tray and sprinkle with the cinnamon.
  4. In a bowl combine the granola, chopped pecans, olive oil and mixed nut butter. Fold in the blackberries.
  5. Divide the mixture between the apple halves. Bake in the preheated oven for 30 mins or until the apples have softened, the blackberries have released their juices and the crumble topping is crisp.
  6. Serve warm with dollop of yoghurt and enjoy!
