Prebiotic chunky date bark

This prebiotic-rich date bark is gooey, chewy and naturally sweet. Made with only a handful of ingredients, including mixed nuts for that diversity hit. It’s a simple, delicious snack your taste buds and microbes will love!

Ingredients

  • 12 medjool dates, pitted
  • 35g mixed nuts, roughly chopped (we used almonds, peanuts and pistachios)
  • 2–3 tbsp nut butter of choice
  • 100g dark chocolate (70%+), melted
  • 1 tsp extra virgin olive oil

OPTIONAL TOPPINGS

  • 1 tbsp chopped pistachios
  • 1 tbsp freeze dried raspberries

Method

  1. Line a small tray or plate with baking paper. Slice each date to open and press flat onto the tray, arranging them close together in a row. Repeat with all 12.
  2. Place another sheet of baking paper over the top and use a rolling pin or glass to squash the dates until relatively flat.
  3. Spread the nut butter evenly over the dates, then sprinkle the chopped mixed nuts on top.
  4. Next, stir in the extra virgin olive oil into your melted dark chocolate. Mix until smooth.
  5. Drizzle the chocolate mixture over the top of your nut and date bark, and chill in the fridge or freezer until set. Add your optional toppings, and cut into squares to serve. Enjoy!
