Fruity fibre-filled ice lollies

Made with avocado, kiwi and raspberry, they’re packed with 5 plant points and if you’re thinking avocado in ice lollies is a strange idea… trust us on this one!

Ingredients

  • 2 ripe avocados
  • 1 cup canned coconut milk (240ml)
  • 2 tbsp honey
  • 2 kiwis, cut into chunks
  • 60g frozen raspberries
  • 1 tbsp chia seeds
  • Juice from ½ lime
  • 2 tbsp water, to loosen the mixture if needed

Method

  1. Put everything in a blender other than the raspberries, and blend until smooth, if the mixture looks too thick add the extra water.
  2. Stir the raspberries into the blended mix, pour into the moulds, add wooden popsicle sticks and freeze until frozen solid (4 hours or more).
