Super Six Carrot cake balls

A delicious snack that’s high in fibre, loaded with polyphenols, and gives you all Super Six plants groups in one bite. A single batch is never enough. Freeze in single portions and enjoy as a mid-morning boost or a snack on the go.

Ingredients

Base:

  • 4 Medjool dates (approx. 60g pitted)
  • 40g oats (we used Bio&Me Oats & Plenty)
  • 1/2 tin butter beans, drained and rinsed (approx. 200g)
  • 1 large carrot, grated (approx. 100g grated)
  • 2 tbsp flaxseed, milled
  • 1 tsp allspice
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp ground ginger
  • 1 tsp grated fresh ginger (optional)

Filling:

  • 25g walnuts

Coating (Choose one):

  • Dessicated coconut
  • Chia seeds
  • Poppy seeds

Method

  1. Place the dates, flaxseeds and oats into your food processor and blitz until everything is roughly blended.
  2. Add the rest of the base ingredients and blitz again. The mixture should be moist but not so wet that you can't roll it (if it's too wet, add an extra sprinkle of oats).
  3. Using a walnut as the centre, form a ball around it with the mixture. Leave naked or roll in your coating of choice. Repeat.
  4. Pop into the fridge to firm up for at least 2 hours before serving. Enjoy!
