Ingredients
- 1 x 400g tin of black beans, drained and rinsed (240g drained weight)
- 1tsp vanilla extract
- 100g oats, ground into a flour
- 10 medjool dates, pitted
Toppings:
- 25g sesame seeds
- 80g dark chocolate (70%+), melted
Method
- Line a tray with baking paper and set aside.
- Place the medjool dates in a bowl and cover with boiling water. Leave to soak for 5 minutes to soften, then drain well.
- Add the dates, beans and vanilla extract to a food processor, and blend until a smooth paste forms.
- Transfer the mixture to a bowl, add the oat flour and mix until a soft dough comes together.
- Using around 1 tablespoon of mixture at a time, roll into bite-sized balls and place onto the lined tray.
- Coat half of the balls with sesame seeds and place them on the tray.
- Dip the remaining balls into the melted chocolate, allowing any excess to drip off before returning them to the tray.
- Place in the fridge for at least 30 minutes, or until firm. Then enjoy!
Top tip: Your dough mixture should be moist but not so wet that you can’t roll it. If it’s too wet, add extra oat flour.
