Ingredients

  • 1 x 400g tin of black beans, drained and rinsed (240g drained weight)
  • 1tsp vanilla extract
  • 100g oats, ground into a flour
  • 10 medjool dates, pitted

Toppings:

  • 25g sesame seeds
  • 80g dark chocolate (70%+), melted

Method

  1. Line a tray with baking paper and set aside.
  2. Place the medjool dates in a bowl and cover with boiling water. Leave to soak for 5 minutes to soften, then drain well.
  3. Add the dates, beans and vanilla extract to a food processor, and blend until a smooth paste forms.
  4. Transfer the mixture to a bowl, add the oat flour and mix until a soft dough comes together.
  5. Using around 1 tablespoon of mixture at a time, roll into bite-sized balls and place onto the lined tray.
  6. Coat half of the balls with sesame seeds and place them on the tray.
  7. Dip the remaining balls into the melted chocolate, allowing any excess to drip off before returning them to the tray.
  8. Place in the fridge for at least 30 minutes, or until firm. Then enjoy!

Top tip: Your dough mixture should be moist but not so wet that you can’t roll it. If it’s too wet, add extra oat flour.
