Polyphenol packed dark chocolate bark

Rich, crunchy, and bursting with antioxidants, this chocolate bark blends dark chocolate with colourful nuts and fruits for a feel-good snack.

Ingredients

  • 200g 70% dark chocolate
  • 50g white chocolate
  • 2 tsp extra virgin olive oil
  • 100-150g mixed nuts and dried fruits (we used pistachios, walnuts, cashews, dried figs, currents, and goji berries)
  • ½ tsp sea salt

Method

  1. Melt the dark chocolate in the microwave for 40-60 seconds, stirring rapidly every 15 seconds. Once melted, stir through the extra virgin olive oil.
  2. Pour the chocolate mixture on to a lined baking tray and thinly spread the chocolate. Then, sprinkle on the mixed fruits & nuts, and sea salt. Place in the fridge for a few mins to set.
  3. Meanwhile, in a separate bowl, melt the white chocolate in the microwave (again stirring every 15 seconds).
  4. Once the dark chocolate is firm, drizzle on the white chocolate using a fork. Place in the fridge for 30 mins (or until solid), then remove and break into pieces. And enjoy!

Store in an airtight container in the fridge.
