Antioxidant-packed chocolate covered stuffed figs

These chocolate stuffed figs are the ultimate anti-inflammatory alternative to a box of chocolates. Feel free to get creative and pack in the diversity by adding different gut-nourishing plants to your stuffing, such as walnuts, flaxseeds or pomegranate seeds – they make a great sharing treat for anyone wanting to nourish their gut health without sacrificing on taste.

Ingredients

Stuffed figs

  • 1 small carrot, grated
  • 115g ricotta
  • 2 tsp sweetener of choice
  • 1 orange, zested
  • 25g pistachios, chopped, plus extra for topping
  • 1 tsp poppy seeds
  • 18-20 semi-dried figs
  • 80g 75% dark chocolate

Method

  1. Place the carrot in a bowl and mix in the ricotta, sweetener, orange zest, pistachios and poppy seeds.
  2. Cut a cross in the top of each fig and pull them apart gently to create a little pocket, then stuff around 1 tsp of the ricotta mixture into each (you can use a piping bag if you have one).
  3. Melt the chocolate in a bowl set over just boiled water (or in the microwave) and drizzle over each fig, sprinkle with a few chopped pistachios and transfer to the fridge to set for 30 mins. They will keep in the fridge for up to three days or in the freezer for up to 2 weeks.
