Ingredients
For the dressing
- 3 tsp date paste (2 dates blitzed in a food processor with 4 tbsp water)
- 4 tbsp extra virgin olive oil
- Juice from 1/2 lemon
- a pinch of cumin & salt
For the salad
- 1/2 large cucumber
- 2 large tomatoes
- 1 tin (400g) mixed beans (4 different types)
- 1/2 zucchini, ribboned
- 1/3 cup (50g) feta
- 1/2 cup (120g) cooked brown rice or grain of choice
- 2 cups (60g) spinach
- handful of mixed seeds
