Easy to prepare and packed with fibre, protein and B vitamins, these overnight oats are the perfect way to start your day and give you a head start on those plant points!
Ingredients
- 250g silken tofu, drained
- 1 banana, mashed
- 2 medjool dates
- ½ tsp cinnamon
- 2 tsp cocoa powder
- 1 orange, zested & juiced
- 4 tbsp of yoghurt (we used Bio&Me Vanilla Kefir Yoghurt)
- 200g oats (we used Bio&Me Oats and Plenty Super Seedy)
- 1 courgette, grated, liquid squeezed out
- Milk of choice (optional)
To serve
- 2 tbsps of yoghurt (we used Bio&Me Vanilla Kefir Yoghurt) (optional)
- 1 banana, sliced (optional)
Method
- Add the tofu, bananas, dates, cinnamon, cocoa powder, orange juice and yoghurt to a blender and blitz until smooth.
- Transfer to a bowl and stir in the oats along with the courgette.
- If needed, pour in your milk of choice to get your preferred consistency.
- Transfer into small jars and place in the fridge for at least 1 hr (or overnight).
- Top with extra spoonfuls of yoghurt, banana slices and orange zest.
