When it comes to those afternoon sweet cravings, this high-fibre snack certainly hits the spot. Whether you’re looking to work in more antioxidants, calcium or polyphenols into your diet, this recipe has you covered.
Ingredients
Turmeric & black pepper
- 1 tbsp extra virgin olive oil
- 50g popcorn kernels
- 1 tsp turmeric powder
- ½ tsp black pepper
- Pinch of salt
Strawberry popcorn
- 1 tbsp extra virgin olive oil
- 50g popcorn kernels
- 38g freeze-dried strawberries
Chocolate & coconut popcorn
- 1 tbsp extra virgin olive oil
- 50g popcorn kernels
- 150g 70% dark chocolate, melted
- 20g desiccated coconut
Method
- Heat the oil in a large saucepan, add the popcorn kernels and cover with the saucepan lid.
- As soon as it begins to pop, continuously shake the pan to ensure the popcorn doesn’t burn.
- After 1 min or so, once the popcorn has slowed down significantly, remove from the heat.
- For the turmeric coating, mix the turmeric, black pepper and sea salt in a small bowl and stir.
- Sprinkle over the popcorn and shake the bowl/ stir through until fully coated
- For the freeze-dried strawberries coating, blend the freeze dried strawberries into a blender for 20 seconds, until it forms a fine powder.
- Sprinkle over the popcorn and shake the bowl/ stir through until fully coated.
- For the bounty coating, add the desiccated coconut to a pan over a medium-low heat for a few mins until toasted.
- Spread the popcorn over a sheet of greaseproof paper, then drizzle over the dark chocolate and sprinkle the coconut. Leave until the chocolate has firmed up.
- Break up the popcorn and transfer into a bowl.
