Ingredients
1 cup vanilla kefir yoghurt (we used Bio&Me)
100g frozen mixed berries
1 tbsp honey (optional, to taste)
Method
Add the Bio&Me kefir yoghurt (and honey if using) to a blender, then blitz for up to 1 minute or until the mixture is frothy, with lots of air bubbles - this will make the ice cream lighter.
Add in half of the mixed berries and blend for an extra 5-10 seconds. You don't want this to be completely smooth.
Pour the mixture into a container (approx 3 inches deep) and gently add the remainder of the berries. Place in the freezer for 4 hours or until frozen.
Remove the ice cream from the freezer and let stand for a few minutes to soften. Then scoop to serve with your toppings of choice. Enjoy!
